The first time I tried crispy pork belly, I wasn’t actually in China… I was in Boston’s Chinatown, a neighborhood full of Asian-inspired parks, architecture, and of course, great Chinese restaurants.

When I saw the roasted ducks, soy sauce chickens, and roast pork hanging in the windows, I knew I was in the right place!

Quick lesson: In Chinese cooking, it’s tradition to have three textures in a single dish... and crispy pork belly is the perfect example.

It has the crisp skin, the melty fat layer, and the chewy lean meat. Pop a piece in your mouth and you get all three layers in a single bite!

It’s warm, succulent, and juicy, with the most amazing crunch. It’s truly one of those “you have to try it to understand” type dishes.

There’s a Chinese saying that goes: “Eat ‘til you’re full at breakfast, eat ‘til you’re good at lunch, and eat less for dinner.”

With these Steamed Water Eggs, you’ll start the day off with a filling and delicious meal.

These eggs are like nothing you’ve tried before. When you put it in your mouth, this dish is so velvety, it’s like a rich, flavorful pudding… you don’t even need to chew! It’s more like silken tofu than regular eggs.

And I love how simple this dish is to make. All it takes is a couple fresh eggs, scallions, a bit of soy sauce, and a little salt… but the end result is mouth-wateringly delicious.

Steamed Water Eggs

Mandarin name: Zheng Shui Dan
Region: All across China
Tasting Notes: Silky, custard-like, filling, nutritious


Chongqing Spicy and
Numbing Chicken

Mandarin name: Chongqing La Zi Ji
Region: Sichuan cuisine
Tasting Notes: Spicy, numbing, succulent, crispy


This dish is an all-time classic of Sichuan cooking.

Imagine a plate of crispy fried chicken smothered in dried chili peppers, Sichuan peppercorns, and pungent aromatics like garlic, ginger, star anise, and five-spice powder.

If you like Kung Pao chicken, think of Spicy and Numbing Chicken as a more “sophisticated” version of that dish – smokier, spicier, and with a more complex taste.

And don’t be alarmed by all the chilies – they aren’t for eating! Instead, they lend a spicy kick to the cooking oil, giving the chicken just the right amount of heat.

The combination of heat, numbiness, savory spices, and the succulent juiciness of fried chicken makes this one of my favorite traditional recipes.

Spice is great but spice and numbing is the best!

I love this dish for three reasons:

1) It tastes amazing
2) It’s super cheap
3) It’s easy to make

Hand-Torn Cabbage is magical… with just a few spices, marinade, and a little pork you can transform a head of cabbage into a delicious, even luxurious dish.

It’s a little savory, slightly sweet, but also tangy and spicy at the same time. The texture is incredible... you get a satisfying crunch with every bite.

Why is it called “hand-torn”? The idea is, by tearing the cabbage instead of cutting it, you preserve more of the nutrients like Vitamin C.

However it works, it’s delicious… and a must-try if you love Chinese food.

Region: Northern Chinese cuisine
Tasting Notes: mouth-watering, fragrant, aromatic, delicious


When I was little, my whole family, including me, my mom and dad, aunts, uncles, and cousins would gather around a table at my grandmother’s house and wrap dumplings together.

Making dumplings is always a special experience... especially with this mouth-watering pork and chive recipe. Trust me, this will be one of the most fragrant, aromatic, delicious dumplings you ever bite into!

It takes a little time, but the payoff is so worth it. Honestly, with this recipe your dumplings will be better than 99% of the Chinese restaurants you could visit… all made by you at home.
